Day 01 CUSCO – COOKING CLASSES

Departure to visit the local traditional market to prepare some of Peru’s emblematic dishes, as well as the national drink of Peru. We will start the morning by visiting a traditional market. Where local farmers supply fresh food every night, this market is a sea of ​​vendors offering almost every variety of products native to Peru. They will give us a sample of their fruits and other products while we marvel at the variety of ingredients offered in Peru, one of the countries with the greatest biodiversity in the world and producer of an amazing variety of superfoods from the Jungle, the Andes, and Coastal valleys, from potatoes, physalis, quinoa to maca. Then, we will go to a local restaurant, the perfect setting to carry out the cooking class. You will learn cooking techniques with the help of our chef. The menu is fixed, we will use the ingredients that we knew and learned in our visit to the market. The class will start with the exquisite starter dish; “Causa Limeña”, this traditional dish consisting of two layers of yellow potatoes crushed with yellow chili and filled in many cases with vegetables, seafood, or chicken. Then we prepare the national dish of Peru, “Ceviche” made with the catch of the day, red onion, chili peppers, served with sweet potato and corn. You will also learn the steps of how to make the national drink of Peru, “Pisco Sour”.
